I don’t know about you, but we have been so excited to see the sun shining and feel the weather warming!

After a couple months of being home, working on homework with the kids, and not having a lot of places to go, these sunny days are making all the difference!

We’ve been grilling a lot more, which is giving us more time to test out the MiniMax from Big Green Egg — a small ceramic charcoal grill that adds big time flavor!

The smell that wafts out of this thing while it’s going is really incredible. It is nothing like the average propane barbecue!

These Maple Soy Grilled Turkey Thighs are one of the first things we made.

They have a simple, sweet and savory marinade that uses just a few ingredients and you can throw it together in just a few minutes.

We love grilling bone in turkey thighs because they turn out so juicy every time and the skin helps to baste the meat as it cooks.

Pair them with some Instant Pot Brown Rice, Broccoli Salad, or Potato Salad for an incredible summer meal!

How to Start a Charcoal Grill:

  1. Fill your grill with the charcoal of your choice. There are many kinds, but for this we are using lump hardwood.
  2. Once you have filled your MiniMax, make sure the air vent door is open as well as the lid.
  3. You can use a bought fire starter cube or a little torch but whatever you do, do not use petroleum starter fluid. Lighting the charcoal isn’t hard but just take your time and give the charcoal a few minutes to get started.
  4. After 10 minutes close the lid and give the grill time to warm up.

How long to let a Charcoal Grill burn before cooking:

The length of time will depend on the size of your grill as well as charcoal and desired cooking temperature.

It could take about 15-20 minutes for it to reach temperature — the important thing you’ll want to see is that the grill is at the temperature you will be cooking at.

How long to cook turkey thighs:

The important thing to remember when cooking turkey thighs is not the cook time, which can vary depending on a variety of factors such as exact cooking temperature, size of the turkey thighs, cooking method, etc., but the internal temperature you are looking for.

You want to cook bone-in turkey thighs until they reach an internal temperature of 165 degrees F, in the thickest part of the meat.

For this recipe, I found that to be about 40-50 minutes, but always be sure to check the internal temperature before consuming.

Ingredients

  • 4 bone in, skin on turkey thighs (mine were roughly ¾ lb each)
  • 3/4 cup pure maple syrup
  • 3 tablespoons soy sauce low sodium
  • 2 teaspoon minced ginger
  • 2 teaspoon minced garlic
  • 1/8 teaspoon red pepper flakes
  • 1 1/2 teaspoons salt
  • 1/4 cup oil

Instructions

  • Place turkey thighs in a medium glass container or a large freezer bag.

  • In a medium bowl or liquid measuring cup, whisk together maple syrup, soy sauce, ginger, garlic, pepper flakes and salt.

  • Pour half of the marinade into the container or bag with the turkey. Cover and refrigerate the remaining marinade.

  • Add oil to the turkey thighs. Seal container or bag and turn or massage to coat.

  • Refrigerate turkey thighs for at least one hour, and up to 24 hours before grilling.

  • To cook, preheat Minimax to 400 degrees F, following the directions in the post above.

  • Place turkey thighs, skin side down, on the grill and grill for 40-50 minutes, turning occasionally, basting once with reserved marinade in the last 15 minutes of cook time.

  • Grill until a meat thermometer inserted into the thickest part of the meat reaches 165 degrees F. Remove from the grill and let rest for 5 minutes before serving.

    How could this be made in the oven, or is the major flavor component achieved from the charcoal grilling?

      You could make them in the oven! I would cook at 375 and start at 30 minutes, adding 5-10 minutes or more where needed to reach the minimum internal temperature
